INGREDIENTS
100g Oat Flour
50g Rice Flour
6 Oysters
1 Leek (200g)
1/8 tsp White Pepper
1/4 tsp Salt
100ml Water
2-3 Tbsp Extra Virgin Olive Oil
INSTRUCTIONS
1. In a mixing bowl, combine the oat flour, rice flour, salt, and white pepper.
Stir until the dry ingredients are well mixed. Add the finely chopped leek to the mixture.
2. Gradually add water to the dry ingredients while stirring continuously until a smooth batter is formed.
3. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
4. Pour a ladleful of the pancake batter onto the hot skillet to form pancakes, each with a diameter of about 5-6 cm. Make two pancakes.
5. Cook until you see bubbles forming on the surface of the pancakes. Then, place one fresh oyster on one pancake and cover it with another pancake to create a sandwich. Cook the other side until they are golden brown and the oyster is cooked through.
6. Continue this process until you've used all the batter to make more pancake-oyster sandwiches.
7. Serve your leek and oyster oat flour pancakes warm and enjoy the delightful combination of flavors and textures.
