Carrot-Mixed Oat and Rice Flour Tuna Wrap

This gluten-free tuna wrap features a delightful mix of carrots in oat and rice flour tortillas, paired with fresh veggies and perfectly seasoned tuna marinated in an Asian-inspired sauce.

Carrot-Mixed Oat and Rice Flour Tuna Wrap
Making: 4 pcs

TUNA MARINADE INGREDIENTS:

2 pieces of Tuna (340g)
2 tablespoons soy sauce
1 tablespoon maple syrup
1 tablespoon rice wine (optional)
1 tablespoon sesame oil
1/2 teaspoon pepper

INSTRUCTIONS

1. In a bowl, combine all the tuna marinade ingredients and let them marinate for at least 2 hours.

After marinating, heat a large non-stick skillet over medium-high heat. Cook the tuna until it's no longer pink, about 10 minutes for each side. Set aside to cool down, then thinly slice (approximately 0.2cm).

GLUTEN FREE CARROT, OAT, RICE FLOUR TORTILLAS INGREDIENTS:

200g carrot, chopped
100g oat flour
50g rice flour
1/8 teaspoon salt
150g water
4 teaspoons oil

VEGETABLES:

1 green onion, thinly sliced
80g red bell pepper, thinly sliced
80g yellow bell pepper, thinly sliced
80g orange bell pepper, thinly sliced

INSTRUCTIONS

1. Add chopped carrots, oat flour, rice flour, salt, and water to the mixer, then blend well.

2. Heat a large non-stick skillet over medium-high heat.
Add 1 teaspoon oil and spoon 2 tablespoons of the carrot, oat, and rice flour mixture into the skillet, spreading it into a 15 cm round.
Cook one side for 5 mins and then turn to the other side for 5 mins.
Repeat until the mixture is used up.

3. Place the carrot, oat, and rice flour tortillas on a plate.
Arrange 2 slices of tuna, green onion, and slices of red, yellow, and orange bell pepper down the center of each tortilla.
Wrap tightly, like a burrito. Enjoy!

Notes:
You can customize the vegetables or add your favorite sauces for extra flavor.
