Creamy Asparagus & Mushroom Soy Soup with Pan-Seared Topping

Servings: 4 Portions

INGREDIENTS

200g Asparagus, trimmed and cut into segments
60g Shallots (or half a red onion), finely chopped
70g Cremini mushrooms, sliced
250ml Soy milk (unsweetened recommended)
150ml Water (or vegetable broth)
2 tbsp olive oil (divided: 1 tbsp for sautéing mushrooms, 1 tbsp for the soup base, plus a few drops for garnish)
1/4 tsp salt (adjust to taste)
1/8 tsp black pepper

INSTRUCTIONS

Pan-Sear the Mushrooms: Heat 1 tablespoon of olive oil in a pan over medium heat. Arrange the mushroom slices in a single layer. Pan-sear for 2 minutes, then flip and sear for another 2 minutes until both sides are golden and crispy. Remove and set aside for garnish.

Sauté Aromatics & Asparagus: In the same pan, add the remaining 1 tablespoon of olive oil. Sauté the shallots (or red onion) for 2 minutes until fragrant. Add the asparagus pieces and water. Simmer for 5 minutes, or until the asparagus is tender.

Blend: Transfer the asparagus and onion mixture (along with the cooking liquid) to a food processor. Blend until the texture is perfectly smooth.

Combine & Simmer: Pour the blended mixture back into the soup pan. Lower the heat, stir in the soy milk, and cook for 10 minutes, stirring occasionally. Keep the heat low to prevent the soy milk from separating.

Season & Serve: Season with salt and pepper to taste. Ladle into bowls and top with the reserved pan-seared mushrooms. Finish with a drizzle of olive oil and black pepper if desired.
