INGREDIENTS

12 shucked oysters (reserve the oyster juice)
1 onion (200g), thinly sliced
2 eggs (70g each), beaten
1/2 cup oyster juice
1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon vegetable oil
Salt and pepper to taste
Scallions, thinly sliced, for garnish

INSTRUCTIONS


1. Heat a pan over medium heat and add 1 tablespoon of vegetable oil.

2. Add the sliced onion and stir-fry for about 1 minute until fragrant and lightly golden.

3. Pour in the reserved oyster juice and bring it to a gentle boil for 1 minute.

4. Add the beaten eggs to the pan, stir gently, and season with salt and pepper to taste. Cook for 1 minute, then turn off the heat.

5. Add the oysters to the warm pan and let the residual heat gently cook them to avoid overcooking.

6. Serve over a bowl of rice. Top with the onion-egg mixture, oysters, and garnish with thinly sliced scallions.
