Gluten-Free Greek-Style Leek Rice Paper Rolls

Inspired by the Greek spanakopita (spinach and feta pie), these crispy rice paper rolls feature tender autumn leeks and locally produced feta cheese, all wrapped in gluten-free rice paper. Perfect as a flavorful appetizer or party snack!

INGREDIENTS

1 large leek (about 400 g), finely chopped
1 tablespoon olive oil (for sautéing the leek)
100 g feta cheese, crumbled
1 egg, lightly beaten (for the filling)
Freshly ground black pepper, to taste
24 rice paper sheets (16 cm round)
1 egg, beaten and mixed with ½ tbsp olive oil (for dipping)

INSTRUCTIONS

Prepare filling

1. Heat a pan over medium heat. Add olive oil and chopped leeks, then sauté for 2–3 minutes until soft and fragrant.

2. Let cool slightly, then stir in feta, egg, and pepper until combined.

Prepare the rice paper
1. Mix the beaten egg with olive oil in a wide, shallow bowl.

2. Briefly dip each rice paper sheet into the mixture until pliable (avoid over-soaking).

Assemble the Rice Rolls
1. Place 2 softened rice paper sheets on a clean surface, slightly overlapping.

2. Place a spoonful of the leek-feta filling in the center.

3. Fold the bottom of the rice paper over the filling, tuck in the sides, and roll up tightly (like a burrito).

4. Repeat with the remaining rice paper and filling to make 12 rolls.

Bake
1. Preheat the oven to 350°F (175°C).

2. Place the rolls on a parchment-lined baking tray.

3. Bake for 30 minutes, until golden and crisp on edges.

Serve
Let cool for 5 minutes before serving.
Enjoy warm with a side of Greek yogurt or a fresh salad.
