Golden Almond Flour & Oat Flake Cookies

INGREDIENTS
1 cup almond flour
1 cup flaked oats
1/4 cup maple syrup
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 cup olive oil
1 egg, beaten
6 whole almonds (for garnish)
INSTRUCTIONS
Preheat the oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix dry ingredients: In a large mixing bowl, combine the almond flour, flake oats, salt, and baking powder.
Mix wet ingredients: In a separate bowl, whisk together the olive oil, maple syrup, and beaten egg.
Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir until well combined.
Shape the Cookies: Scoop 2 tablespoons of dough and roll it into a ball. Gently flatten each ball with the back of a spoon or your palm to approximately 5 cm in diameter and 1 cm in thickness. Place the shaped cookies 2 inches apart on the prepared baking sheet.
Bake: Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown. The cookies will be soft when they come out but will firm up as they cool.
Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
