Golden Curry Spiced Baked Salmon

INGREDIENTS

800g salmon
1 medium onion, chopped (150g)
1 tablespoon garlic, minced
1 tablespoon curry powder
¼ teaspoon ground cinnamon
1 teaspoon paprika
1 teaspoon cumin powder
1 teaspoon coriander powder
2 tablespoons olive oil
¼ teaspoon black pepper
½ teaspoon salt
1 teaspoon maple syrup
2-3 bay leaves

INSTRUCTIONS

1. Cut the salmon into small pieces, about 3x3 cm.

2. In a bowl, combine the chopped onion, all the spices, minced garlic, olive oil, black pepper, salt, and maple syrup. Mix well.

3. Add the salmon pieces and bay leaves to the mixture, ensuring the salmon is well coated. Cover and marinate for at least 1 hour (preferably overnight for deeper flavor).

4. Preheat the oven to 375°F (190°C).

5. Place the marinated salmon pieces on a baking sheet lined with parchment paper.

6. Bake for 10 minutes, then flip the salmon pieces and bake for another 10 minutes.
