INGREDIENTS

For the Roasted Potatoes
1 bag Red Bliss potatoes (1.36 kg)
4 tbsp olive oil
1 tbsp fresh lemon juice
1 tbsp dried oregano
½ tbsp dried rosemary
1 tsp salt
½ tsp black pepper

For the Cucumber Yogurt Sauce
½ cucumber (about 200 g), shredded
1 cup natural yogurt
1 tbsp fresh lemon juice
½ tbsp olive oil
1 clove garlic, finely chopped
1 tbsp fresh mint, finely chopped
¼ tsp salt

INSTRUCTIONS

Prepare the Potatoes
1. Wash the potatoes and cut them into wedges (about 5 cm width).
2. In a large bowl, combine potatoes with olive oil, lemon juice, oregano, rosemary, salt, and pepper. Toss well to coat evenly.

Roast
1. Preheat the oven to 450°F (230°C).
2. Line a baking sheet with parchment paper and spread the potatoes in a single layer.
3. Roast for 20 minutes, flip the potatoes, then roast for another 20 minutes, until golden and crispy.

Prepare the Cucumber Yogurt Sauce
1. While potatoes are roasting, shred the cucumber and gently squeeze out excess water.
2. In a bowl, mix cucumber, yogurt, lemon juice, olive oil, garlic, salt, and mint.
3. Chill in the fridge until ready to serve.

Serve
1. Transfer the hot roasted potatoes to a serving plate.
2. Serve with the fresh cucumber yogurt sauce on the side.
