INGREDIENTS

500g salmon
6 green onion stalks (around 150g)
1 teaspoon salt
1/2 teaspoon white pepper powder
1/2 teaspoon maple syrup
4 tablespoons olive oil
1 lemon, sliced (for serving)

INSTRUCTIONS

Prepare the Green Onion Sauce:
1. Clean the green onions and cut them into 2 cm pieces.
2. Place the green onions in a food processor and blend for a few seconds until finely chopped.
3. Add the salt, white pepper powder, maple syrup, and olive oil to the food processor and blend until well combined.

Prepare and marinate the Salmon:
1. Cut the salmon into pieces approximately 3 x 5 cm.
2. Marinate the salmon pieces with the green onion sauce, ensuring they are well coated.
3. Cover and refrigerate for at least 2 hours, or preferably overnight.

Cook the Salmon:
1. Heat a cast iron pan over medium heat.
2. To check if the pan is hot enough, add a few drops of water. If the water droplets roll around, the temperature is right.

4. Turn the pieces over and fry for another 5 minutes, or until the salmon is cooked through and has a golden-brown crust.
