Irresistible Autumn Recipe: Chicken Rice with Leek Sauce

INGREDIENTS
450g chicken (1 chicken breast, 1 thigh)
3 cm piece of ginger, sliced into 4 pieces
100g leek, finely chopped
2 tablespoons soy sauce
2 tablespoons chicken fat or oil
1 teaspoon maple syrup (or sugar)
1/8 teaspoon white pepper
50ml chicken broth
INSTRUCTIONS
Cook the Chicken:
1. In a medium pot, bring water to a boil. Add the ginger and chicken, and boil for 20 minutes. Turn off the heat and let the chicken simmer for another 20 minutes.
2. Remove the chicken from the pot and let it cool down. Shred the chicken into thin strips using a fork. Set aside and reserve 50ml of the chicken broth for the leek sauce.
Prepare the Leek Sauce:
1. In a pan over medium heat, add 2 tablespoons of chicken oil (or fat).
2. Add the chopped leeks and stir-fry for 1 minute until fragrant. Remove 2/3 of the cooked leeks and set aside for later.
3. Continue cooking the remaining 1/3 of the leeks for another minute until lightly golden. Add the soy sauce, maple syrup, white pepper, and reserved chicken broth.
Stir well and cook for 1-2 minutes to form a rich leek sauce.
Assemble:
1. Serve cooked rice in bowls, top with shredded chicken and the reserved stir-fried leeks.
2. Drizzle the leek sauce over the top.
3. Optionally, garnish with fresh chopped leek for extra flavor.
