Japanese-Style Oven-Roasted Salmon & Scallion Skewers
Made with fresh, seasonal, locally harvested scallions and tender salmon, these Japanese-style skewers are seasoned simply with salt, white pepper, sesame oil, and sake for a clean, savory flavor. INGREDIENTS
465g Salmon fillets (skin removed, cut into 2cm cubes)
50g Scallion white parts (finely chopped)
25g Scallion green parts (roughly chopped)
10g Garlic (approx. 2 cloves, minced)
1/2 tsp Salt
1/4 tsp White pepper
1 tsp Sesame oil
1 tbsp Potato starch
1 tsp Sake (optional)
6 Wooden skewers (15cm, pre-soaked in water)
INSTRUCTIONS
Prep the Aromatics
1. In a food processor, pulse the scallion white parts until finely chopped. Remove and set aside.
2. In the same processor, combine the salmon cubes, scallion green parts, garlic, salt, white pepper, sake, and potato starch.
3. Pulse until the mixture reaches a smooth, paste-like consistency.
Preheat
Preheat your oven to 350°F (175°C). Line a 25 x 36cm baking pan with parchment paper.
Shape and Assemble
1. Divide the salmon mixture into 6 equal portions.
2. With wet hands, take one portion and gently shape it into a cylinder (approx. 10 x 2cm).
3. Carefully insert the wooden skewer lengthwise through the center.
4. The "Double Texture" Technique:
Leave 3 skewers plain.
For the remaining 3 skewers, roll the shaped salmon cylinder in the reserved chopped scallion white parts until fully coated. This adds a delicious, crunchy layer.
Roast
1. Place all skewers on the prepared baking pan.
2. Roast for 15 minutes.
3. Carefully flip the skewers and roast for another 10 minutes, or until golden and cooked through.
