Kimchi Shrimp Oatmeal Flour Pancakes

INGREDIENTS
1 cup oatmeal flour
1/2 cup rice flour
12 shrimp, peeled and deveined
1 cup carrot, finely sliced
1/2 cup green onion, finely sliced
1/2 cup kimchi, finely sliced
350 ml water
1/2 teaspoon salt
1/4 teaspoon white pepper
6 tablespoons vegetable oil
INSTRUCTIONS
1. In a mixing bowl, combine the oatmeal flour, rice flour, salt, and white pepper.
Stir until the dry ingredients are well mixed. Add the finely sliced carrots, green onions, kimchi, and shrimp to the mixture.
2. Gradually add water to the dry ingredients while stirring continuously until a smooth batter is formed. Mix just until combined.
3. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
4. Pour a ladleful of the pancake batter (about 2 tablespoons) onto the hot skillet to form pancakes, each with a diameter of about 10 cm.
5. Cook until bubbles form on the surface of the pancakes, about 5-7 minutes.
Flip and cook the other side until golden brown and the shrimp is cooked through, about 5 minutes more.
6. Continue this process, adding more oil as needed (1 tablespoon of vegetable oil per pancake), until all the batter is used to make 6 pancakes.
