Lemon Zest Atlantic Salmon Patties

Servings: 25 salmon patties
INGREDIENTS
700g Salmon, cut into pieces
1 tablespoon Ginger, minced
1 tablespoon Garlic, minced
2 green onions, finely chopped
1/2 teaspoon coriander powder
1/8 teaspoon hot chili powder
1/4 teaspoon salt
1/2 tablespoon lemon juice
1 tablespoon lemon zest
1 egg
2 tablespoons oat flour
1 tablespoon olive oil
INSTRUCTIONS
1. In a food processor, add ginger, garlic, and green onions, and finely mince them.
2. Add salmon pieces, coriander powder, hot chili powder, egg, salt, lemon juice, lemon zest, oat flour, and olive oil. Pulse until well combined and the mixture is moist and pliable.
3. Heat a skillet over medium heat and lightly grease it with olive oil.
4. Take portions of the salmon mixture (about 2 tablespoons each) and shape them into round patties, approximately 5cm in diameter and 1/2 inch thick.
5. Place the patties in the skillet and cook for about 5 minutes on each side, or until golden brown and cooked through.
6. Once cooked, remove the patties from the skillet and place them on a plate, decorating with slices of lemon.
