On Christmas morning, I randomly chose a subway station . Normally, there are many homeless people around the Langelier subway station, but on Christmas morning, there was not a single person. It was freezing outside, with temperatures around minus 10°C. Holding a box of cookies, I walked into the station.

In the distance, I noticed a dark figure curled up in a corner, resembling a stray dog trying to keep warm. As I approached, I realized it was a person, deeply asleep, likely no older than 35. I didn’t want to disturb his rest, so I gently placed the box of cookies beside him. In my heart, I silently wished him a Merry Christmas and a Happy New Year, hoping for his safety and well-being.

After leaving, I felt a complex mix of emotions. I had always donated to shelters, but this time, being up close to someone in that situation, I truly wished for him to regain a life of dignity.

Making: 6 Mini Rice-Oat Flour Cakes


INGREDIENTS

2 Eggs
2 tablespoons Oat Milk
1 tablespoon grapeseed Oil
30g Rice Flour
30g Oat Flour
2 tablespoons Maple Syrup

INSTRUCTIONS

1. Preheat the oven to 325°F (163°C).
2. In one bowl, use a mixer to beat egg whites until stiff peaks form.
3. In another bowl, whisk together egg yolks, oil, maple syrup, and oat milk.
4. Mix rice flour and oat flour and add them to the egg yolk mixture. Stir until well combined.
5. Gently fold the stiff egg whites into the rice and oat flour mixture until well incorporated.
6. Grease or line a mini cake mold.
7. Pour the batter evenly into the molds.
8. Bake at 325°F for approximately 20 minutes.
9. Allow the cakes to cool before serving.
