Lunar New Year Maple Syrup Adzuki Bean Glutinous Rice Cake

This festive Lunar New Year dessert features a smooth adzuki bean filling, enhanced by the rich sweetness of maple syrup and glutinous rice flour, creating a tender texture that highlights the natural flavor of the beans.

INGREDIENTS

350g adzuki bean
6 tablespoons maple syrup (original version: 3 tablespoon, not so sweet)
550g glutinous rice flour
2.5 cups water
6 tablespoons maple syrup (original version: 3 tablespoon, not so sweet)
½ tablespoon vegetable oil (for greasing the container)

INSTRUCTIONS


Prepare the Adzuki Beans:
1. Wash and soak the adzuki beans for 2 hours.
2. Drain the water and steam the beans for 30 minutes until soft.
3. Once cooked, add 6 tablespoons of maple syrup and gently mix without breaking the beans.

Prepare the Rice Flour Mixture:
1. In a bowl, mix 2.5 cups of water with 6 tablespoons of maple syrup.
2. Gradually add the glutinous rice flour while stirring continuously to prevent lumps.

Assemble the Cake:
1. Grease a glass or baking container with ½ tablespoon of vegetable oil.
2. Pour the rice flour mixture into the container, filling it up to 80% full.
3. Smooth the surface with a spatula and cover the container with aluminum foil.

Steam the Cake:
Steam the adzuki bean rice cake for 40 minutes.
To check for doneness, insert a chopstick into the center—if it comes out clean, the cake is ready. Let it cool completely before slicing.

Pan-Fry the Cake:
1. Once cooled, cut the cake into 2 cm thick slices.
2. Pan-fry each slice over medium heat for about 5 minutes per side, or until golden and crispy.
