INGREDIENTS

10 Fresh Malpeque Oysters
Lemon wedges (optional) for garnish

For the Dipping Sauce:
1 tablespoon Fish Sauce
1 tablespoon Garlic, minced
1/2 tablespoon Sugar
1 tablespoon Water
1/2 tablespoon Coriander, finely chopped
1 tablespoon Lime Juice
1/2 tablespoon Chili or Red Pepper, finely chopped


INSTRUCTIONS

For the Dipping Thai Sauce:

1. In a small bowl, combine the fish sauce, minced garlic, chopped coriander, chopped chili, sugar, water, and fresh lime juice. Mix well, and adjust the seasoning according to your taste.
2. Cover the sauce and let it sit for about 15-30 minutes to allow the flavors to meld.


For Serving the Oysters:
1. Arrange the shucked and cleaned oysters on a platter.
2. Drizzle the prepared dipping Thai sauce over the oysters.
3. Optionally, place lemon wedges on the platter for garnish.
