Miso-Simmered Salmon with Mixed Vegetables is a delightful fusion of tender Atlantic salmon, earthy mushrooms, and vibrant Quebec vegetables, all gently simmered in a rich, flavorful miso broth.

INGREDIENTS
400g Atlantic Salmon, cut into 6 pieces
100g Shiitake or White Mushrooms, sliced
100g Carrot, thinly sliced
100g Cabbage, cut into bite-sized pieces
300g Mixed Quebec Green and Yellow Haricots, cut in half
1 Stalk Green Onion, cut in half
1 Small Ginger, 3cm, 5g, sliced
1 Cup Water
2 Tablespoons Sake or Rice Wine
3 Tablespoons Miso Paste
2 Tablespoons Mirin (sweet cooking sake)
INSTRUCTIONS
1. Clean and cut the salmon into 6 pieces.
2. Slice the carrots, cabbage, green onion, and haricots.
3. In a pot, combine the miso paste, sake, mirin, and water. Stir well until the miso paste is fully dissolved.
4. In a 30cm pan, spread a layer of cabbage, carrots, ginger, and green onion. Place the salmon pieces on top, and pour the miso sauce over the ingredients. Cook over medium heat until the mixture comes to a boil, about 5 minutes.
5. Once boiling, add the shiitake mushrooms and mixed haricots to the pan. Simmer for an additional 5 minutes over medium heat until the vegetables are tender and the salmon is fully cooked.
6. Serve hot, ensuring each portion includes a piece of salmon and a mix of the vegetables.
