One-Pot Meal : Salmon & Oyster Mushroom Rice

INGREDIENTS
1 medium onion (about 130g), thinly sliced
120g oyster mushrooms, thinly sliced
325g fresh salmon, cut into 3x3 cm cubes
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon rice wine (optional)
1/4 teaspoon white pepper
1/4 teaspoon salt (optional)
2 cups rice
2 cups water
4 stalks green onion, finely chopped (for garnish)
INSTRUCTIONS
1. Prepare the ingredients
Cut the salmon into small cubes (about 3x3 cm). Thinly slice the onion and oyster mushrooms.
2. Cook the rice
Rinse the rice thoroughly and drain.
In a rice cooker pot, add the rice, salmon, onion, and mushrooms.
Pour in the soy sauce, mirin, rice wine (if using), and water.
Gently shake to evenly mix the sauces.
Cook the mixture in the rice cooker on the regular white rice setting.
3. Finish and serve
Once cooked, season with white pepper and salt to taste.
Gently stir in the chopped green onions.
Serve warm.
This dish tastes great the next day too and is perfect for a packed lunch.
