Oven-Baked BBQ Chicken Skewers with Autumn Vegetables: Butternut Squash and Leeks

INGREDIENTS
1 red onion, chopped (200g)
750g chicken breast, cut into 3-4 cm cubes
1/2 butternut squash, cut into 3-4 cm pieces
1 leek, cut into 3 cm pieces
20 wooden or stainless steel skewers
For the BBQ Marinade:
5 cloves garlic (20g)
1/2 red onion (60g)
3 tablespoons ketchup
1 tablespoon maple syrup
1 tablespoon apple cider vinegar
1 tablespoon olive oil
2 tablespoons water
1/2 teaspoon cayenne pepper
1 teaspoon paprika powder
1/2 teaspoon coriander powder
1/4 teaspoon black pepper
1 teaspoon herbes de Provence
1/2 teaspoon salt
INSTRUCTIONS
Prepare the BBQ Marinade
In a food processor, blend all the marinade ingredients until smooth.
Marinate the Chicken
Place the chicken cubes in a large bowl, add the BBQ marinade, and mix well. Cover and refrigerate for at least 4 hours or overnight for best results.
Assemble the Skewers
Thread one piece of chicken, one piece of butternut squash, and one piece of leek onto each skewer. Repeat the pattern to fill the skewers as desired.
Sear the Skewers
Heat a pan over medium heat, add a small amount of oil, and brown the skewers for about 1 minute on each side. Set aside.
Bake the Skewers
Preheat the oven to 350°F (180°C). Place the skewers on a baking sheet and bake for 12 minutes. Turn the skewers and bake for another 12 minutes, or until the chicken is fully cooked.
Check for Doneness
Ensure the chicken is cooked through by slicing into a larger piece. It should be hot and no longer pink in the center.
