INGREDIENTS

1 kg small yellow potatoes, grated (julienne style)
2 tablespoons olive oil
1/2 teaspoon sea salt
1/2 teaspoon black pepper

INSTRUCTIONS

1. Prepare the potatoes:
Peel and grate the potatoes using a box grater or food processor. Remove excess moisture using a salad spinner or a clean towel.

2. Season:
In a large bowl, combine grated potatoes with olive oil, salt, and black pepper. Mix well to coat evenly.

3. Shape:
Line a baking sheet with parchment paper. Using a round mold (8 cm diameter), fill halfway (about 2 cm thick) with the potato mixture and press firmly. Repeat until all mixture is used.

4. Bake:
Preheat the oven to 375°F (190°C). Bake for 30 minutes, flipping halfway through for an even, golden crisp.
