Simple Seasonal Mushroom Sauce

Seasonal mushrooms from the region, paired with flavorful condiments to bring out a rich, delicious taste. Easy to make and perfect with pasta or meat.

Servings: 6 Portions

INGREDIENTS

2 packs of mushrooms, sliced (450g)
2 small onions, chopped (160g)
3 cloves of garlic, chopped (15g)
2 tablespoons olive oil
1½ tablespoons ketchup
1 tablespoon miso paste
½ teaspoon black pepper
¼ teaspoon salt
200ml water
1 tablespoon potato starch
2 tablespoons water (for thickening the sauce)

INSTRUCTIONS

1. Heat a pan over medium heat and add the olive oil. Add the chopped onions and garlic, and sauté for 3–4 minutes until fragrant and lightly golden.

2. Add the sliced mushrooms and stir-fry for about 4 minutes. Season with black pepper and salt, then stir again.

3. In a small bowl, mix the 200ml water with the ketchup and miso paste until well combined. Pour the mixture into the pan and simmer for 10 minutes, stirring every 5 minutes.

4. In a separate bowl, mix the potato starch with 2 tablespoons of water to make a slurry. Add it to the pan and stir until the sauce thickens.

This flavorful and convenient sauce pairs well with pasta, gnocchi, or meat.
