Spicy Celery and Radish Salad

Servings: 4 Portions

INGREDIENTS

5 stalks celery (270g), diagonally sliced
10 radish (200g), thinly sliced
1/4 tsp salt (for marinating celery)
1/4 tsp salt (for marinating radishes)
1/4 tsp salt (for seasoning the paste)
4 cloves garlic (16g), minced
1/2 tsp ginger (3g), minced
2 tbsp Korean red pepper flakes (gochugaru)
1/2 pear or apple (50g)

INSTRUCTIONS

Draw out excess moisture:
Diagonally slice the celery and slice the radishes. Place them in separate bowls, toss each with ¼ tsp of salt, and let them rest to draw out excess water.

Blend the paste:
In a food processor, combine the garlic, ginger, pear (or apple), Korean red pepper flakes, and ¼ tsp of salt. Pulse until the mixture reaches a smooth, paste-like consistency.

Drain and toss:
Drain and gently squeeze out any excess liquid from the marinated celery and radishes. Transfer the vegetables to a mixing bowl, add the freshly blended paste, and toss well until evenly coated.

Chill and serve:
Transfer the salad to an airtight container and chill in the refrigerator before serving.
