Summer recipe: Maple-Glazed Sweet & Sour Corn

Seasonal two-color corn roasted in the oven and glazed with a naturally sweet and tangy sauce made from fresh apples, maple syrup, and lime juice. A hint of smoked paprika adds a gentle BBQ flavor, making it perfect for summer gatherings.

INGREDIENTS

4 two-color corn cobs
2 apples (about 150g each)
6 cloves garlic (about 30g)
4 tablespoons olive oil
2 tablespoons maple syrup
1 teaspoon smoked paprika
1 teaspoon salt
2 teaspoons lime juice
Black pepper, to taste

INSTRUCTIONS

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Peel the corn. Cut each cob into 3 rounds, then quarter each round to create 12 total pieces per cob.

3. In a food processor, blend the apples, garlic, olive oil, maple syrup, smoked paprika, salt, lime juice, and black pepper until smooth.

4. Pour the sauce over the corn pieces and mix well to coat evenly.

5. Arrange the corn on the baking sheet and bake for 25 minutes.

6. Flip the corn and bake for another 15 minutes until lightly browned and caramelized.

7. Serve warm and enjoy!
