Servings: 2 Portions

INGREDIENTS

350g Chicken breast, shredded
220g Radish, thinly sliced
10g Garlic (approx. 1 large clove), minced
1/4 tsp Chili paste (optional)
2 tbsp Lemon juice
1 tbsp Honey
1 tbsp Olive Oil
3/4 tsp Salt (divided: 1/2 tsp for marinating radish, 1/4 tsp for seasoning)
3 tbsp Fresh cilantro, chopped

INSTRUCTIONS

1. Cook and Shred the Chicken
Bring a large pot of water to a boil.
Add the chicken breast, cover with a lid, and cook for 15 minutes. Turn off the heat and let the chicken continue to simmer in the hot water for an additional 15 minutes.
Remove, let cool, then shred the chicken.

2. Prepare the Radish
Toss the thinly sliced radish with 1/2 tsp of salt. Let it sit for 15 minutes to draw out excess moisture. Drain the water well and pat the radish dry.

3. Prepare the Honey-Lemon Dressing
In a small bowl, whisk the honey and lemon juice together until the honey is fully dissolved.
Add the minced garlic, chili paste, olive oil, and the remaining 1/4 tsp of salt. Whisk until well combined and slightly emulsified.

4. Assemble the Salad
In a large salad bowl, combine the shredded chicken, prepared radish, and chopped cilantro. Pour the dressing over the salad and toss gently until all ingredients are evenly coated. Serve immediately.
